Famous Kutchi Pakwan recipe
One of the famous snacks recipe from Kutch, Gujarat located in India made with less than 5 ingredients. Easy to make, and best crispy snacks to have with Tea. I am sure you will never be satisfied with just one Pakwan. The layers of this pakwan makes it the tasty crispy snack.
Yield: 8 pakwans
Materials
- All purpose flour maida – 3 cups
- Salt – to taste
- Oil – for frying
- 1-2 tsp oil to knead the dough
- 3-4 tsp Ghee for slurry
- Pepper powder – 2 tbsp (optional)
Instructions
- In a large bowl, mix the all purpose flour(maida), add salt and pepper powder(optional) to the flour. Add a pinch of oil and knead the dough. Add a little oil to the dough and knead well and cover for 1-2 hours.
- Make thick slurry with 3tbsp all purpose flour(maida) and 3tsp ghee.
- Make small round balls and make thin round chapatis like structure.
- Now take one ball and Roll each dough piece into a flat circle, and apply the prepared slurry on these chappatis and then put another thin chappatis on it. Repeat this way and make 5 to 6 layers.
- Cut strips of the layered chappatis and make a roll of this strips and cut it into equal parts. Now with the palm of your hand, shape the dish.
- Use the roller pin(balen) to make it flat , prepare it lightly. Slowly fry the prepared dish in hot oil. [Note : use thin knife to make the layers visible while frying with both hands gently.]
- Take a fresh paper so that the paper soaks the oil of pakwan.
- Crispy kutchi pakwan recipe is now ready to serve. Enjoy!
